30 ml 1 oz Etsu Handcrafted Gin
20 ml 0.75 oz La Yuzu
40 ml 1.25 oz Lemon juice
20 ml 0.75 oz Sugar syrup

15 ml 0.5 oz Egg white
1 Lemon zest

1 Prepare

Get your equipment, glass, garnish and ingredients ready. Cut you lemon for squeezing and zest for garnish

2 Ice

Fill your Coupe glass with crushed ice to chill it down.

3 Add ingredients

Measure 30 ml Etsu Handcrafted Gin and pour it into your shaker.
Measure 20 ml La Yuzu and pour it in.
Using your Mexican elbow juicer measure 40 ml Lemon Juice and pour it in
Measure 20 ml Sugar Syrup and pour it into your shaker.
Measure 15 ml Egg white into your shaker.

4 Ice in Shaker

Fill your shaker all the way to the top with cubed ice.

5 Shake

Close the shaker and shake hard for 5-10 seconds so the drink gets thick and foamy.

6 Empty and fine strain

Empty the ice from the coupe glass back into the ice bucket. Take off the small lid of the shaker and double strain your White Lady Supreme using your Fine Strainer into the empty ice-cold coupe glass.

7 Garnish and serve

Take your lemon zest and press it gently over the drink so the lemon oils spray over the top of the drink, then place it nicely on top of the foam.

Bartender Tip:

Replace with sugar with a cordial of your choice eg. Elderflower adds delicate flavors to the White Lady
