50 ml 2 oz Gin
25 ml 1 oz Sweet Vermouth
20 ml 0.75 oz Pineapple juice
15 ml 0.5 oz Grenadine
15 ml 0.5 oz Egg white
1 Pineapple wedge

1 Prepare

Cut your pineapple ready for garnish

2 Ice

Fill both your glass and shaker with cubed ice

3 Add ingredients

Pour all the ingredients into your shaker

4 Shake

Close the shaker and shake hard for 9 seconds

5 Strain

Empty the ice from your coupe glass back into the ice bucket. Take off the small top off the shaker and strain out the mix into the coupe

6 Garnish and serve

Garnish with your Pineapple

The Cocktail

This drink was invented by a dude named Ngiam Tong Boon, a bartender at the Raffles Hotel in Singapore around the early 20th century. Serius, yet superbly, smooth, and a bit fluffy.

 

Bartender Tip:

For extra body and frothiness, if you really like the foam, try the dry shake before you add ice and use a highball glass.
